Connecticut executive chef shares his perspective on seasonal ingredients, local agriculture, and creating meaningful dining experiences.

West Hartford, CT – August 22, 2026 – Connecticut Executive Chef Dillon Robert Haines is highlighting the importance of seasonal cooking and locally sourced ingredients, an approach that has helped shape his culinary philosophy throughout more than two decades in professional kitchens.

Based in West Hartford, Connecticut, Haines has developed a strong appreciation for the relationship between chefs, local producers, and the communities they serve. Surrounded by Connecticut’s agricultural landscape, he believes chefs have an opportunity to create better meals by paying closer attention to what is being grown and harvested close to home.

“Seasonal cooking gives you a natural starting point,” said Haines. “Instead of deciding what you want to cook and then searching for the ingredients, you can look at what is available and build something around it. That limitation can actually make you more creative.”

Haines began his culinary career as a line cook in 1998 after completing his culinary education. He later advanced to a sous chef position, where he gained experience supervising kitchen teams, training employees, maintaining quality standards, and contributing to menu development. Since 2012, he has worked as an executive chef, with responsibilities ranging from seasonal menu planning and recipe development to staff leadership and kitchen operations.

Throughout that progression, ingredients have remained central to his approach.

Haines regularly draws inspiration from farmers’ markets and seasonal produce. Rather than designing menus that remain unchanged throughout the year, he prefers allowing the seasons to influence what reaches the plate.

He also sees local sourcing as a way to strengthen the connection between restaurants and their surrounding communities. Learning how ingredients are produced, understanding when they are at their best, and developing relationships with growers can give chefs a greater appreciation for the food they prepare.

“Knowing where an ingredient comes from changes the way you think about using it,” Haines said. “When somebody has spent months growing something, you want to treat it with respect and make the most of it.”

His philosophy also emphasizes simplicity. While modern kitchens provide countless opportunities to experiment with techniques and presentation, Haines believes adding more elements does not automatically make a dish better. In some cases, removing unnecessary components allows the quality of seasonal ingredients to stand out.

That perspective has developed through years of cooking, testing recipes, managing busy services, and learning from both successful and unsuccessful dishes.

Haines encourages younger culinary professionals to remain curious throughout their careers. Food trends and customer expectations will continue to change, but he believes fundamentals such as preparation, consistency, teamwork, and respect for ingredients remain essential.

For Haines, seasonal cooking ultimately comes back to creating an experience that feels connected to a particular place and moment.

“Food doesn’t have to be complicated to be memorable,” he said. “Fresh ingredients, thoughtful preparation, and people enjoying a meal together can be enough.”
